Hey you beautiful tribe, welcome to our blog. Today I'd like to share with you a very simple, delicious and totally addictive recipe. You'll literally need one main ingredient and that's just small potatoes, for a smashed potato recipe. I didn't realise how easy this recipe was until I looked it up on Pinterest. So let's not delay this deliciousness any further - you need these babies in your life. Let's take your meal prep to the next level shall we?
So here we go.
1 bag of small potatoes
2 Tbs of coconut oil
Any herbs/spices of your choice.
1 - Wash the potatoes and put them to boil. Boil them until they are roughly 70 % ready.
2 - Melt the coconut oil and pour it into a flat oven tray.
3 - Check that the potatoes are 70% boiled (how to do this - simply use a knife or a fork and pierce one potato to see how easy it goes in, judge it by that).
4 - Pour the water out and lay all the potatoes on your baking tray.
5 - Using a fork, start smashing each potato to about 50%. Please don't smash the life out of them or else you'll end up with crumbles ;))
6 - Drizzle a little more oil over them, sprinkle the salt and herbs and put in the oven at about 200 degrees.
7 - Keep an eye on them and cook them as crispy as you wish. Usually it will take 30-40min. I like mine crispy so it took me 40min roughly.
