Halloween Special - 10 healthy and super simple pumpkin recipes

Now if you're from the US or England, or if you haven't been hiding under a rock, you most likely know that Halloween is fast approaching. The supermarkets are covered as per usual, even over here in Australia. There's no missing it. So going with the theme I thought I would bring you 10 of my favorite quick & easy ways to incorporate pumpkin into my life. As after all, pumpkin is the vegetable of Halloween.

Sweet or Savory

Pumpkin is one of those vegetables that can be used in both sweet & savory dishes, & still be delicious. Plus, if you put it in a pudding/dessert that definitely makes it healthy right!? If you're looking for something tasty but on the slightly cheaper side, pumpkin is definitely a go-to veggie. I must admit they are not the easiest thing to prepare at the beginning, but once you get the hang of it, you’ll be eating pumpkin more often than not. Also if you really struggle, you can buy it pre-prepared in pretty much every chain supermarket or health food shop.

I normally make a load of roasted veg at the start of the week (Sign Up Now to recieve my Free Top 10 Health Hits) as it's so easy to chuck in so many dishes, & pumpkin is always a must. Roast pumpkin can be used in so many different, yummy ways.

 

With that in mind, here are my Top 10 Healthy Recipe Ideas Using Pumpkin:

1- P.L.A.T

Forget the B.L.A.T – No one wants bacon anymore. It’s all about the veggies.

The Pumpkin, Lettuce, Avocado, & Tomato is definitely a winner when it comes to the open sandwich. I would also highly recommend adding aioli, or finding a vegan alternative if you want to add that extra umpth. Serve it on crispy Turkish bread to add crunch.

This is one of my personal favorites. Actually, I lie, they are all my personal favorites, I just love pumpkin. This one is something that definitely became a staple in my life, & I would eat on a regular basis at the café I worked at in Melbourne. Quick, easy & super yummy, what's not to love!?

2- Pumpkin & Pesto Tortilla Pizza

Craving pizza? Never fear we have the Pumpkin & Pesto Pizza coming to your rescue.

All you need to start is a tortilla wrap - cover the base in pesto, add some oven roasted pumpkin, feta, roast capsicums, red onion, whatever tickles your taste buds. Place in the oven for 2-3mins until the tortilla has gone slightly crispy & the toppings are warm – Finish with rocket & balsamic glaze.

*Keep an eye on it as the tortilla wraps cook super quickly. It might be worth using slightly warm pumking to start with.

The thought of this one is literally making my mouth water right now!

Plus more often than not, depending on the quantity of toppings, these tortilla pizzas tend to be under 500kcals. Trust me they taste just as good if not better (as they are guilt free & you don't get that sluggish feeling) than a real pizza.

3- Pumpkin & Goats Cheese Bruschetta

Slow roast pumpkin + dukkah baked goats cheese, with a lemon, mint & pomegranate dressing on sourdough.

*This is also super yummy if you add garlic pan-fried mushrooms

It’s actually such a nice change from the usual - smashed avo on toast, you find in every single cafe. I went to a little cute cafe in Cairns the other day- Caffiend & that had this on the menu. It was honestly one of the best breakfasts I've had in ages. Definitely, something I will be making when we move into our new home in Byron Bay!

4 - Pumkin Boats

Omg, these are literally amazing! Such a great dinner, to have with a nice yummy salad, maybe even my Sweet Paprika Pumpkin Seed Salad - below #5

Get yourself some Butternut Squash Pumpkins.
Cut evenly in half, chop the top & bottom.
Scoop out the seeds (save them for your Pumpkin Seed Salad #5 or your Pumpkin Seed Overnight Oats #8).
Score the pumpkin diagonally in both directions, without fully cutting through!
Place on lined baking try with cut sides facing up.
Blend Olive oil, garlic, rosemary, salt & pepper, sage & thyme into a herb oil.
Rub herb oil over the faces of the pumpkin & roast for 1hour at 180degrees, or until pumpkin flesh is soft. 
Serve topped with goats cheese, quatered fresh figs & balsamic glaze.

This is such a great way to get your vegetables into your diet, & it's super easy to keep in the fridge for another meal later on in the week.

 

5- Sweet Paprika Pumpkin Seed Salad

Need something quick and easy for a ladies lunch? Make a giant bowl of this, put out some dips, maybe even your Homemade Pumpkin Hummus - recipe below #6, put out a loaf of yummy bread, & your Pumpkin Carpaccio - recipe below #7, & you'll be sorted. Trust me, they'll love it! 

Get a giant bag of rocket, spinach, & mixed salad leaves. Fry off some halloumi, chop up some mango, add some avocado & fresh Santos tomatoes, dress with a lime & chili dressing & top with your super yummy homemade Sweet Paprika Pumking Seeds that you made in the recipe below #8.

This Salad is so fresh, if you're feeling cheeky it's great with a lovely mojito on a summers evening.

6- Pumpkin Hummus

Place pumpkin on a lined baking tray.
Spray with oil and roast at 180C for 25 minutes or until golden.
Place roast pumpkin, chickpeas, tahini, lemon juice, ground cumin and garlic clove in a food processor.
Season.
Process until smooth.
Stir in fresh coriander.

There you have it! It is honestly that easy. Grab some crispy Turkish bread, or some yummy red onion crackers & you've got your self the perfect, vegan, easy to grab, healthy go-to condiment. One that everyone loves!

 

7 - Pumpkin Carpaccio

Thinly slice the pumpkin & oven roast until soft/slightly crispy. This won't take long, so don't take your eyes off it for too long!

Layer the pumpkin alternately with thin slices of beetroot + tomato. Sprinkle Himalayan rock salt, pepper & drizzle with extra virgin olive oil. Flourish with basil & top with a lovely crumbled feta

This one is so simple, quick & easy, but it looks so effective! A great one as an entree at a dinner party. The betroot add a fantastic pink colour to the feta.

 

8 - Pumking Seed Overnight Oats - The Sweet side of Things

If you have been keeping up to date with my latest blog posts you'll have spotted my recent love for Overnight Oats. Now I have to admit this love has just kept on growing. & the other day, I actually used some of my own freshly roasted, honey, pumpkin seeds in my Overnight Oats. - click here to get my overnight oat recipe, or Subscribe Now to make sure you don't miss out on anymore!

I roasted some pumpkin, as I usually do on a regular basis. This time instead of throwing the seeds away, I washed them down, spread them out evenly on an oiled baking sheet & put them in the oven to roast for 30mins to dry them out. I then tossed the seeds again in oil, & added salt/pepper & sweet paprika to half only (for my pumpkin seed salad - recipe above #5) & put the second half on a different tray unseasoned. They then went back in the oven for 20mins until they were crispy/golden brown. After leaving all the pumpkin seeds to cool, I then tossed the unseasoned pumpkin seeds in light agave syrup, before adding them to my Overnight Oats.

Add a spoonful the night before when you put the oats in the fridge & then add the second spoonful in the morning to add some extra crunch. They are honestly so yummy, quick & easy. The sweet seeds are also super yummy on a nice rocket & goats cheese salad, that's if you haven't munched them all as a cheeky evening snack.

 

9 - Mombasa Coconut + Pumpkin - The Sweet side of Things

Steam the pumpkin pieces for 5 to 10 minutes. Remove the pumpkin skin.
Add pumpkin flesh & 1 1/2 cups white sugar (play around with this accordingly for you) to a saucepan & heat over medium-low temperature until the sugar dissolves.
Add 1 cup of coconut milk, 1 tsp of ground cardamom, cinnamon & ginger, a dash of nutmeg & allspice.
Keep stirring. Cook until the mixture has thickened to thick pudding-like consistency.

8 ingredients, 40mins, & 200kcals. This is the perfect pumpkin pudding to keep you feeling warm & content over the up & coming winter months. 

 

10 - Spiced Pumking & Chocolate Nut Bliss Balls - The Sweet side of Things

The perfect amount of sweetness to keep you going on those late afternoons.

1 cup of pumking puree (steam the pumpkin, remove skins & blend)
3 cups of rolled oats
1 banana
2/3 cups of honey, maple syrup, agave syrup (whichever you prefer)
1/2 tsp cinnamon & pumpkin pie spice & 1/2 Tbsp Vanilla Extract
2-4 Tbsp ground flax seeds (add more if mixture is wet, less if mixture is dry) 
1 cup chopped nuts (your preference) & 1 cup of your choice of Nutbutter 
Add dark chocolate bits as you like! I like lots & lots!!! 

Mix well with hands, roll mixture into balls, place on a lined baking tray & freeze for 1hour, keep refrigerated.

These will last for a while, so are perfect for grabbing on the go, instead of a coffee. They are full of energy, & health fats! 

 

So there you have it. My favoirute ways to use pumkin in almost any meal! Wether it be a salad, dip or dessert. Where there's a will, there's a way!
