Easy and simple to follow vegan apple pancakes. I scoured the internet for the best apple pancake recipe and found one that wasn't vegan. So I gave myself the challenge to use some of the ingredients on there as well as my own to create a new recipe. Here we go.
Ingredients for batter:
2 apples finely chopped
2 tsp coconut oil
60g Wholemeal (wholewheat) or can use normal flour/ grinded oat flour
2 tsp baking powder
3/4 cup of almond milk
1 tbs of chia seeds to replace the eggs
Ingredients for topping:
1 chopped apple
drizzle of honey
1 - Soak the chia seeds in a bit of warm water and mix them until they start filling.
Heat a nonstick skillet over a medium heat and add one teaspoon of the coconut oil. Add the chopped apple, reduce the heat, and saute until soft, around 3 mins. Remove from heat.
3 - In a large bowl combine the flour and baking powder. In a separate bowl, mix together the milk & chia, stir really well to make sure there are no clumps. Add the wet ingredients to the dry and stir. Don't over mix, leave a few small lumps.
4 - Add the saute apples to the batter mix.
5 - Heat a nonstick skillet on a medium heat and brush with coconut oil. Add tablespoons of the mixture into the pan.
6 - When bubbles rise to the surface, flip and cook the other side until golden. Repeat until the mixture is finished.
7 - Caramelise 1 chopped apple in a frying pan with a tsp of coconut oil.
8 - Sprinkle the apple on top of the pancakes and add the rest of the toppings.
